TERROIR

Warmer sites on calcareous soils with clay and sand on both sides of the mountain ridge, south-east and south-west facing. Elena Walch’s broad portfolio of terroirs span the best aspects of Alto Adige winegrowing. The vineyards are blessed with a combination of Mediterranean warmth and cool winds from the surrounding Dolomites, creating unique and desirable tension in the wines. Hand-picked and selected with the utmost care.

VINIFICATION

Traditional temperature controlled fermentation of about 10 days in stainless steel tanks, followed by malolactic fermentation in French and Slavonian oak barrels of 70 and 22hl. Maturation in large wooden barrels.

FOOD RECOMMENDATION

Full-flavoured, savoury dishes such as venison, game, red meat and mature cheeses.
