According to an old tale, the goldfinch - the "cardellino" - builds its nest only in Chardonnay vines, while not nesting in other grape varieties. Elena Walch has dedicated her debut, an elegant and characterful Chardonnay, to this faithful little bird.

TERROIR

The best Chardonnay parcels at medium altitudes around 300 (1000 ft) to 400 m.a.s.l. (1300 ft) with classic chalky soils. Sun-drenched, warm days alternate with fresh mountain air in the evenings. Elena Walch’s broad portfolio of terroirs span the best aspects of Alto Adige winegrowing. The vineyards are blessed with a combination of Mediterranean warmth and cool winds from the surrounding Dolomites, creating unique and desirable tension in the wines. Hand-picked with the greatest care.

VINIFICATION

Gentle pressing, static clarification, fermentation at a controlled temperature of approx. 20°C. The majority of the must is fermented in French oak barriques, a smaller part in a large wooden barrel, the rest in a steel tank and matures there for 5 months each, followed by bottle maturation.

TASTING

The Chardonnay “Cardellino” shows a straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, a mineral fullness and a spicy touch of tobacco. On the palate, this classic by Elena Walch surprises with exciting freshness and racy minerality, with elegance and juicy length. Inviting, refreshing and drinkable.

FOOD RECOMMENDATION

First courses, smoked salmon and other smoked fish varieties, pasta dishes, especially those with creamy sauces, deep fried fish in bread crumbs or batter, or on its own as an aperitif.
