TERROIR

Calcareous soils with sand in south-east and south-west facing vineyards. Elena Walch’s broad portfolio of terroirs span the best aspects of Alto Adige winegrowing. The vineyards are blessed with a combination of Mediterranean warmth and cool winds from the surrounding Dolomites, creating unique and desirable tension in the wines. VINIFICATION

After harvest, the grapes are carefully pressed. The fresh must is statically clarified at low temperatures and then gently fermented at a controlled temperature of 19°C in steel tanks. The young wine matures in steel tanks for several months on the fine lees.

FOOD RECOMMENDATION

As an aperitif, with pasta and fish dishes, especially freshwater fish.

WINE CRITIC

Caciotta Piccante is a spicy version of the traditional caciotta cheese, incorporating chili peppers for a spicy kick. Try pairing it with a Sauvignon Blanc from local producer Elena Walch.
