It finds its origin in Elena Walch's multiple award-winning single vineyard Vigna “Castel Ringberg”, whose gentle vineyards on complex limestone soils frame the eponymous castle. The vines, some of which are very old, benefit from the unique microclimate with strong day-night temperature differences, and produce a complex Cabernet Sauvignon with spice, power and great potential.

TERROIR OF VIGNA CASTEL RINGBERG
The altitude of the vineyard, located between 330 and 400 meters above sea level, creates an optimal microclimate for the production of wines with a distinctive character. The mild climate of Lake Caldaro is complemented by the cool night breezes and the strong southern afternoon wind "Ora," which brings dry air to the vineyard. The extreme care taken in tending the vineyard, with a strong respect for nature, and the deliberately low yields contribute to making the "Castel Ringberg" vineyard a cradle of exceptional wines.

Must fermentation for approximately 10 days, followed by malolactic fermentation and maturation for 18 months in French oak barriques (Limousine and Allier), almost all of which are new. The wine subsequently matures for several months in the bottle before being released.

TASTING
The Cabernet Sauvignon Riserva Vigna “Castel Ringberg” has a deep dark ruby red color. The inviting bouquet is characterized by complex fruit aromas with wild berries, blackberries, blackberries and plums, as well as spicy notes with tobacco leaves, cloves and a hint of dark chocolate. On the palate, the wine impresses with its full-bodied, fruity richness, pronounced tannins, a beautiful interplay of acidity, a juicy length with great potential and a powerful, zesty finish.

FOOD RECOMMENDATION
Red meat, game and mature cheeses, it is also delicious on its own.
