TERROIR OF THE VIGNA CASTEL RINGBERG
The
altitude of the vineyard, located between 330 and 400 meters above sea level,
creates an optimal microclimate for the production of wines with a distinctive
character. The mild climate of Lake Caldaro is complemented by the cool night
breezes and the strong southern afternoon wind "Ora," which brings
dry air to the vineyard. The extreme care taken in tending the vineyard, with a
strong respect for nature, and the deliberately low yields contribute to making
the "Castel Ringberg" vineyard a cradle of exceptional wines.

Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C (68°F). Part of the must is fermented in wooden barrels, mostly in large 25-hectolitre barrels. The rest is fermented in steel tanks and matures there for 10 months, followed by maturing in the bottle.

TASTING
The Sauvignon Vigna “Castel Ringberg” has a light, elegant straw yellow color with slight green shades. Its invitingly discreet bouquet is characterized by elegant floral notes of elderflower and mountain herbs, a hint of gooseberry and Alpine freshness. With its fruity fullness, elegant structure and juicy minerality, its complex potential and unique harmony, this Sauvignon delights on the palate.

To combine with seafood, fish, pasta dishes and vegetable dishes.

2021WINE CRITIC
A vivid white framed by racy acidity, which is well-meshed with flavors of yellow melon, tangerine and passion fruit. Reveals accents of tarragon, lemon curd, star anise and a rich hint of pastry cream, providing depth and complexity, while the tangy acidity returns with a clean-cut snap on the minerally finish.
