TERROIR

Southeast-facing vineyards on limestone soils. A combination of vineyards at classic medium altitudes and altitudes up to 600 m.a.s.l. (1950 ft) above sea level in the southern part of Alto Adige. Elena Walch’s broad portfolio of terroirs span the best aspects of Alto Adige winegrowing. The vineyards are blessed with a combination of Mediterranean warmth and cool winds from the surrounding Dolomites, creating unique and desirable tension in the wines. Entirely hand-picked.

VINIFICATION

After harvest, the grapes are carefully pressed. The fresh must is statically clarified at low temperatures and then gently fermented at a controlled temperature of 20°C in steel tanks. The young wine matures in steel tanks for several months on the fine lees.

FOOD RECOMMENDATION

As an aperitif, for social drinking, with pasta and fish dishes, especially freshwater fish.
